Homemade potato soup hits the spot on a cold day and is very easy to make. The amount of ingredients don’t have to be followed precisely so it’s simple to adjust the amount you make as well as the seasonings.
5 cups cubed potatoes (1 in cubes)
1/8 cup finely chopped celery leaves
1/8 cup grated carrots
3/4 to 1 cup chopped onion
salt and pepper to suit
2 teaspoons garlic powder
1 stick butter
instant potatoes to thicken if needed
Optional: bacon bits or grated cheese
Combine all ingredients except for instant potatoes and butter. Add enough water to cover and cook until tender. Remove from heat and stir well. Add some instant potatoes to thicken if desired. Add butter, (cut into pieces) and stir until melted. If desired, bacon bits or grated cheese can be sprinkled on top.
